Do "The Chicken Dance" Chicken


Went to my local grocery store the other day and they had seasoned split chickens on sale, so I picked up a pack.  I wanted to flavor it up a little more and went browsing the pantry, after I went home, for something good.... what could I use?  I always buy marmalade in different flavors when I see it, because I love it, and you can use it a lot of different ways.  I had  a citrus flavored jar in the pantry.  It was orange, lemon and grapefruit flavored, so I thought I can brush that on the chicken to pump up the taste.  That is all I put on except what the grocery store seasoned it with.

The chicken is slathered with the marmalade and ready to go on the grill. 
 This is the chicken when I took it off the grill.  Juicy, crispy, falling off the bone chicken.  I put the flame on medium (about 350 degrees) and put the lid down, turn every 15 minutes, keep an eye on it because it will flare up.  It cooked for about 1 hour on the grill (depending on your grill heat).  So tasty and pretty!
Served grilled pineapple with it.  Cut up one pineapple and toss the pieces with brown sugar.  Grill in a grill pan for an outside grill.  It caramelizes on the grill and is much sweeter. 
Grilled some veggies - zucchini, orange and yellow peppers and red onion, don't you just love the colors!  Toss with olive oil, salt and pepper and into a pan that is made for a grill.
Yummy, tasty veggies.  Any leftovers you can toss with pasta for another meal.

"You're The Top Banana" Bread

I am not much of a banana eater, I like them, I just don't really eat them.  I buy bananas for my husband, but when he doesn't eat them fast enough, that means I have to get busy baking or cooking something, so I don't have to throw them out.  I started making this banana bread a few years ago and it is the best one I have ever had.  It's moist, full of banana flavor and best of all, it's so easy to make.   You don't need a mixer (although I use one) to make this bread.  I had a piece right out of the oven,  it was so good with a cup of coffee or maybe tea.  I put nuts in this for the first time and it's amazing!
Recipe below. 

Ingredients, and  ready to start mixing.  Peel three ripe bananas.
 Mash them up, they should look like this.
 Mixing all the good stuff together.
 Add the nuts, then into the pan and oven.
 Warm, full of banana walnut flavor, delicious bread.  See Note - Try this baking spray it's great! 

Banana Bread

Ingredients
1 1/2 cups of all-purpose flour, I use unbleached
1 tsp. baking soda
1/2 tsp salt
1 cup sugar
2 eggs, slightly beaten
1/4 cup butter, melted
3 ripe bananas, mashed
1/2 cup chopped walnuts, optional

Directions
Grease and flour a 9 x 5 x 2 1/2 inch loaf pan.  Preheat the oven to 350 degrees.
In a bowl, whisk together the flour, baking soda, salt and sugar.  Mix in the eggs, melted butter and mashed banana.  Add walnuts if desired.  Pour into prepared loaf pan.  Bake for 1 hour, or until a cake tester or toothpick inserted into the center comes out clean.  Remove from oven and turn pan on it's side for five minutes.  Invert onto a cooling rack, let cool before putting on a serving plate.

Note:  Check the baking aisle of your grocery store for BAKER'S JOY.  It's a non-stick baking spray with flour.  No mess greasing and flouring baking pans, all you have to do is spray them.  It's all in one. I have been using this for years, a tip from my mother.  Nothing ever sticks in the pan.

Her Bags Are Packed And She's Ready To Go

My youngest daughter is going back to college tomorrow and I wanted to have a nice "send off" dinner for her.  I decided on lobster tail and shrimp, since she will be eating junk food I'm sure, once she gets back to school, and she will not have anything better than a seafood meal.  I found the lobster tails at BJ's, 3 nice sized for $35.00 and 1 1/2 pounds of jumbo shrimp for $16.98.   Not a bad price, considering if we went out it would probably be over $125.00 for 5 people. I made a spicy honey soy sauce marinade for the shrimp, wrapped them in bacon and grilled them.   I also grilled the lobster tails with lemon thyme butter. She loves seafood and having a special meal for her "send off" was just the thing she needed..
Recipes below.

All the ingredients you will need for the shrimp marinade.  Clean and devein your shrimp. Cut down the back, open and rinse out the vein under cold water.
Shrimp all done, and now on to the lobster.  Cut down through the top of the shell with kitchen shears and loosen the meat with your fingers.
This is what it looks like when it's all done.  Basted the lobster tail with lemon thyme butter on the grill.. They took about 20 minutes to cook.  Green beans, on the grill too.
Potatoes - slice almost all the way through, open and season with garlic powder, salt, pepper and drizzle melted butter over the top.  Bake at 350 degrees for 1 hour.

Spicy Honey Grilled Shrimp Wrapped in Bacon

2 lemons, juiced
4 cloves of garlic, minced
1 shallot, minced
1/2 cup soy sauce
1/3 cup honey
3 Tbsp. olive oil
1/4 tsp cracked black pepper
1/4 tsp crushed red pepper
1 1/2 lbs. of raw jumbo shrimp, peeled and deveined (about 20 shrimp) 
10 slices of pre-cooked sliced bacon
sesame seeds
4 bamboo skewers, soaked in water

Combine the first 8 ingredients in a bowl.  Mix with a whisk to combine.  Wash, peel and devein the shrimp. Put the shrimp into a zip top bag and pour the marinade over the shrimp.  Let marinate in the refrigerator for 2 hours.  Cut the bacon slices in half  (20 slices).  Remove shrimp from marinade.  Discard marinade. Wrap each shrimp with one piece of the bacon and put onto skewer.  Preheat grill to 350 degrees.  Grill shrimp on each side for 3 - 4 minutes.  Sprinkle with sesame seeds and serve.

Grab The Cannoli!

I always wanted to make cannolis, but was afraid they wouldn't come out right.  I will try anything once, so I did make them and you guessed it, they didn't come out right, well almost.  The shells came out perfect, it was the filling I couldn't master.  The first batch I threw out, which was expensive, but there was no way to save it.  It was too runny and didn't set up right.  Headed back to the grocery store, at 7:00 PM,  for more ingredients because I was going to get this right if it took all night. Then my gears started going and I put together a filling that is rich, creamy, and tasty I might add.  Making homemade cannolis is a little time consuming, as least for me, because I only had 4 cannoli forms and my recipe made 30 cannoli shells.  But let me just say, they are well worth it.  I have cannoli connoisseurs in my family, they have eaten a lot of them from Philadelphia, New York and beyond.  They put them to the test and I have to say they fared well and passed.  Recipe is below.

Some of the ingredients you will need. Mixing up the cannoli shell batter.
Dough is mixed and resting in the refrigerator.  The 5 1/2 inch metal cannoli forms.
 I used a pasta machine because the dough has to be rolled very thin.  You can also use a rolling pin. Made an oval shape on computer to use as my guide so the shells would be somewhat uniform in shape and size.

Cannoli Shells
3 cups of flour
1/4 cup of sugar
½ tsp cinnamon
3 Tbsp. cold butter, cut into small pieces
1 egg
1 egg yolk, reserve the white for sealing shells
½ cup of Marsala wine, Marsala cooking wine or red wine will do.
1 Tbsp. white vinegar
2 Tbsp. cold water
1 small bottle of canola oil

Directions
In a medium bowl, sift the flour, sugar and cinnamon.  Cut the butter into the flour mix with a pastry blender, or if you don't have one, use 2 knives cutting back and forth, until little pea sized balls appear.  Make a small well in the flour and add the egg, egg yolk, wine, vinegar and water.  Mix it with a fork until it starts to form a ball.   Then dump it out of the bowl, onto a clean flat surface, and finish kneading it by hand until a soft ball of dough is formed.  You can add a few drops of water if it seems too dry.  As you are kneading, you may have to add a little bit of flour if the dough is too sticky.   Form dough into a ball,  tucking ends under, put into a bowl, cover and let rest in the refrigerator for 2 hours.

If using a pasta machine divide the dough in to 3 pieces.  Start by flattening the pieces of dough before putting into the machine, sprinkle it with flour and also sprinkle the rollers.  Roll the dough through the machine starting on the first setting.   Then progress through all the settings, each time you roll it through, until you get to the thinnest setting.   Lightly dust your surface with flour and place the pressed dough on that surface.  Use your 5 ½ x 4 inch cutout to cut the dough into shape.  Make sure your shapes are dusted with flour for ease in getting them off the forms after frying them.  Roll the dough onto the cannoli form and seal the edge with a little of the egg white and fry.

If rolling out with a rolling pin, cut into 4 pieces.  Roll the dough out on a lightly floured surface until it is very thin, like a crepe would be but thinner.  Keep it dusted with flour and cut into shape. Roll the dough onto the cannoli form and seal edge with a little of the egg white and fry.

Heat the oil on medium - high in a deep heavy skillet or pan.  When a piece of dough dropped in the oil, and then floats to the top,  the oil is ready for frying.  Drop the cannoli, a few at a time, into the oil with tongs.  Turning the shells,  fry until golden brown on all sides.  They cook in about 2-3 minutes so you have to watch them carefully.  Use tongs to remove them from the oil onto a paper towel covered cooling rack.  Be careful, the tubes are very hot.  Using a towel remove the shell from the form.  The first time some may stick until the tubes are seasoned. Keep repeating until all shells are fried. Note: I turned my oil down to simmer while I was taking the shells off the forms and re-rolling them on the form.  You do not want the oil to burn!

Place the shells in an airtight container until you are ready to use them, they can be kept for up to 1 month.  Only fill the shells if you are eating them right away.

Filling
1  32 oz. container of Sorrentos Whole Milk Ricotta Cheese
2  8 oz. pkgs. of cream cheese, softened
2 ½  cups of powdered sugar, sifted
1 ½  tsp pure vanilla extract
1 ½  cups of semi-sweet mini chocolate chips

Drain any liquid from the ricotta cheese and put it through a food processor.   Pour into a bowl.   If you don’t have a food processor, mix it with a hand mixer until all the lumps are out.  Put the cream cheese through the food processor, or mix it with a hand mixer until creamy.   Combine the cream cheese with the ricotta and mix together.  Add the sugar and the vanilla and mix.  Fold in the chocolate chips.  Put into the refrigerator for about 2 hours to set up the cheeses.  Fill cannoli shells with cheese only when you are ready to eat them or up to an hour before serving.  Put the filling in a zip top bag and cut the tip off one of the bottom ends to fill the cannoli shell.  Fill one end to the center then the other end.  Dust filled cannoli with powdered sugar.

Chicken on a Stick


I like to try new tastes in food, spice things up, keep the flavors interesting.  I get tired of eating the same old things over and over again.   I marinated chicken tenders, in this Thai Peanut Sauce, for dinner the other night then skewered them up.  I used bamboo skewers, you have to soak them before you use them so they don't burn on the grill.

Grilled French Greens Beans are soooo good....... Olive oil, garlic, salt and pepper is all it takes. Sometimes I use the Finishing Butters from Wegmans.  When you take them off the grill, just toss with the green beans and serve.
 Skewers all done, serve with extra peanut sauce for dipping.  Grilled French green beans, yum!
All together now!  And served up with an Asian inspired salad with ginger sesame dressing.


Chicken Satay

8 - 10 bamboo skewers
4 skinless, boneless, raw chicken breasts, thawed
1 bottle of Thai Peanut Ginger Sauce

Place bamboo skewers in a shallow pan and cover with water.  Trim chicken breasts of fat and any leftover skin.  Cut into tenders.  Marinate the chicken tenders in 1/2 cup of the peanut sauce in a large ziploc bag.  Put the bag in the refrigerator and let marinate for up to 4 hours.  Remove from refrigerator and using the skewers, pierce the chicken on the ends and thread on the skewers.  Place skewers onto a heated grill and brush with marinade from the bottle.  DO NOT USE THE LEFTOVER MARINADE FROM THE BAG.  Cook on one side for about 8 minutes, using tongs turn them over, brush again with the marinade, and cook on the other side for 8 minutes. Serve with warm leftover peanut sauce for dipping.

Grilled French Green Beans

1 bag French Green Beans, washed and patted dry
3 Tbsp. Extra Virgin Olive Oil
3 cloves garlic, minced
salt and pepper

Toss green beans with the olive oil, garlic and salt and pepper.  Put into a grill pan that you use on an outside grill.  Toss and cook until lightly browned and blistered.

Salad
Toss together:
2 heads of romaine lettuce, washed and  chopped
1 cup of Craisins
1/2 cup of sliced toffee almonds
1/2 English cucumber, sliced
1/2 cup of match stick carrots
Pour on:
Ginger Sesame Salad Dressing, Marketside is a good one
Top with:
1 cup of won ton noodles

Quality Time, Lunch and Shopping - What Fun!


I spent some quality time with my oldest daughter this weekend, helping her hang curtains in her bedroom, Then she made us both lunch, grilled Italian paninis and salad, it was delicious!  After lunch we went shopping together, what fun!
I found these two storage boxes at Big Lots.  Large was $5.00 and small was $3.00. Also picked up this cute embroidered Halloween flag for $6.00.
 On the way home I stopped at Marshall's and picked up these adorable black leather shoeties by
 Nine West - $39.99, and this big red handbag, with a lot of compartments, that I absolutely love! - $34.99
Kohl's was right next door to Marshall's, oh my lord why do they do this to me! Bought this jade stone and rhinestone bracelet for $5.60, it was originally $28.00.  Vera Wang clear faceted earrings - $2.80 were priced at $14.00.  As I always say - CHECK CLEARANCE FIRST.
Also stopped at Dollar Tree, I am a sucker for party goods.  When it is someones birthday in my house, the cake gets served up on colored paper plates and cute napkins for their special day, and they always have candles on their cake.  All were $1.00 of course!
