Her Bags Are Packed And She's Ready To Go

My youngest daughter is going back to college tomorrow and I wanted to have a nice "send off" dinner for her.  I decided on lobster tail and shrimp, since she will be eating junk food I'm sure, once she gets back to school, and she will not have anything better than a seafood meal.  I found the lobster tails at BJ's, 3 nice sized for $35.00 and 1 1/2 pounds of jumbo shrimp for $16.98.   Not a bad price, considering if we went out it would probably be over $125.00 for 5 people. I made a spicy honey soy sauce marinade for the shrimp, wrapped them in bacon and grilled them.   I also grilled the lobster tails with lemon thyme butter. She loves seafood and having a special meal for her "send off" was just the thing she needed..
Recipes below.

All the ingredients you will need for the shrimp marinade.  Clean and devein your shrimp. Cut down the back, open and rinse out the vein under cold water.
Shrimp all done, and now on to the lobster.  Cut down through the top of the shell with kitchen shears and loosen the meat with your fingers.
This is what it looks like when it's all done.  Basted the lobster tail with lemon thyme butter on the grill.. They took about 20 minutes to cook.  Green beans, on the grill too.
Potatoes - slice almost all the way through, open and season with garlic powder, salt, pepper and drizzle melted butter over the top.  Bake at 350 degrees for 1 hour.

Spicy Honey Grilled Shrimp Wrapped in Bacon

2 lemons, juiced
4 cloves of garlic, minced
1 shallot, minced
1/2 cup soy sauce
1/3 cup honey
3 Tbsp. olive oil
1/4 tsp cracked black pepper
1/4 tsp crushed red pepper
1 1/2 lbs. of raw jumbo shrimp, peeled and deveined (about 20 shrimp) 
10 slices of pre-cooked sliced bacon
sesame seeds
4 bamboo skewers, soaked in water

Combine the first 8 ingredients in a bowl.  Mix with a whisk to combine.  Wash, peel and devein the shrimp. Put the shrimp into a zip top bag and pour the marinade over the shrimp.  Let marinate in the refrigerator for 2 hours.  Cut the bacon slices in half  (20 slices).  Remove shrimp from marinade.  Discard marinade. Wrap each shrimp with one piece of the bacon and put onto skewer.  Preheat grill to 350 degrees.  Grill shrimp on each side for 3 - 4 minutes.  Sprinkle with sesame seeds and serve.
