I was itching to bake something different one day while I puttering around the kitchen, so I went to the pantry and pulled out a box of Devils Food cake mix and asked myself "what can I do with this to make it have a more interesting taste?". So I got to thinking, and to work, and started pulling stuff out of the cabinets and pantry. Coffee I knew always brought out the flavor of chocolate, so I messed with the ingredients and measurements with the cake mix and added coffee to it. The cupcakes do not taste like coffee, they taste like chocolate but more intense. The frosting is to die for. It's regular old butter cream frosting with a little twist, I add vanilla bean paste to it. When the cupcakes are frosted you can see little vanilla beans all over your cupcakes and they look pretty. I have made these cupcakes many times for parties, dinners or just to have a sweet in the house, the plate is always empty by the end of the night and everybody wants the recipe for the "homemade cupcakes".
Grab your ingredients and brew the coffee. Pour all ingredients into a large mixing bowl.
Mix it all together and pour into paper lined cupcake pan. I use a small ladle, it keeps everything
nice, neat and not all over the pan.

Homemade
Vanilla Bean Butter Cream Frosting
Cupcakes
1 box of Betty Crocker Super Moist Devils Food cake mix
2/3 cup of water
2/3 cup of strong brewed coffee
3 eggs
½ cup canola oil
Pour cake
mix into a large mixing bowl. Add the
water, coffee, eggs and oil. Beat on
medium speed for 2 minutes. Divide the
batter into cupcake pan(s) with paper liners.
Bake according to directions on the box. Cool and frost.
Frosting recipe is below.
Frosting
1 stick of butter, softened
4 cups of confectioner’s sugar (10X)
1 tsp vanilla
¼ tsp Nielsen - Massey Pure Vanilla Bean Paste
4 -5 Tbls. milk
Beat butter in a bowl with an electric
mixer until creamy. Add 1 cup of the sugar, the
vanilla and vanilla bean paste and beat.
Alternately, add the remaining sugar and milk until combined. Makes about 2 cups of frosting.
