Who doesn't love a summer tomato, they are at their peak with flavor at this time of year. I made a side dish of these heirloom tomato gems for dinner on Saturday and they were fabulous! They're so easy to make, just skewer them up, drizzle with olive oil, sprinkle with salt and pepper, grill just until they start to pop, and when they're done toss on some chopped fresh basil, that's all they need. If you like, drizzle a little balsamic vinegar on when they come off the grill for added flavor.
Aren't they so pretty!
I served mine with grilled boneless skinless chicken breast and fresh corn on the cob. Everything on the grill makes dinner easy and no mess in the house.
