How About Some Chicken Milanese

The first time I had Chicken Milanese was at Pizzeria Uno.  It is now the only thing I order when I go there for a meal, love it.  Chicken Milanese is one of my favorite chicken dishes to eat and to make.  The chicken cutlets come out crispy on the outside and juicy and tender on the inside.  You can serve Chicken Milanese under a salad (like Pizzeria Uno) or with some of you favorite side dishes and pasta. This is how I make mine.

Egg, seasoned breadcrumbs, cheese, chicken cutlets.
Coat those cutlets on both sides.
Ready for the olive oil.
 Crispy tasty chicken.

 CHICKEN MILANESE

1 egg
1 Tbsp water
4 chicken cutlets
1 cup of seasoned Italian breadcrumbs
1/2 cup Asiago, Parmesan or Romano cheese, grated (could also use a combination of these cheeses)
1/2 tsp salt
1/4 tsp pepper
4 Tbsp Extra Virgin Olive Oil

In a medium size bowl scramble the egg with the water, set aside.  Mix the breadcrumbs, cheese, salt and pepper together on a plate, have another plate ready for the coated cutlets.  Dip the chicken cutlets in the egg mixture so they are coated with egg on both sides.  Coat them in the breadcrumbs on both sides pressing so the crumbs stick. In a large frying pan add the olive oil and heat on medium heat. Cook the chicken 3 - 4 minutes on each side. Serves 4.
