Hey Santa, Hey Santa, Whiskers!

Here is a great tasting cookie for the holidays, if you like coconut.  Santa's Whiskers are one of my favorites.  I love the taste of almond and coconut together, and they are definitely the colors of Christmas, red, green and white, these are an easy cookie to make.  Mix the batter, roll in a log, then in coconut, wrap in plastic wrap, refrigerate, then slice and bake - easy peasy!  Recipe is below.

Batter mixed, then spread a bag of sweetened coconut on a baking sheet.
 Roll your logs in the coconut, press so it sticks all over, then wrap tightly in plastic wrap.
 Slice them down and line up on baking sheet.  See, the coconut looks like Santa's Whiskers - hence the cookie name!
 Baked, a colorful, toasted coconut, chewy cookie, and who doesn't like that!

Santa's Whiskers

1 - 7 oz bag sweetened flaked coconut
1 cup of butter, softened
1 cup sugar
2 Tbsp milk, skim is fine
1 tsp vanilla extract
1 tsp almond extract
2 1/2 cups unbleached flour
1 cup red candied cherries, finely chopped
1/2 cup green candied cherries, finely chopped
1/2 cup pecans, finely chopped

Spread coconut out on a baking sheet, set aside.  In a large bowl of a mixer, beat butter until creamy.  Add the sugar and beat until fluffy.  Add the milk, vanilla and almond, beat well. Add the flour and beat until combined.  Turn mixer off.  With a wooden spoon stir in the cherries and pecans.  Shape into three 7 inch long rolls.  Roll in coconut to coat all sides and ends.  Wrap tightly in plastic wrap and refrigerate for 3 - 4 hours. Preheat oven to 375 degrees.  Line baking sheets with parchment paper, set aside.  Cut into 1/4 inch thick slices.  Place on baking sheets 1 inch apart.  Bake for 12 minutes or until lightly browned.  Remove and cool on wire racks.  Makes about 40 cookies.
