Old Time Favorite - Oatmeal Raisin Cookies

Warm oatmeal cookies are so good.  Soft and chewy inside, with a little crisp on the outside.  This is another cookie I added to the cookie list for Christmas.  I roll mine into balls and then in sanding sugar for extra sparkle (you know I love the sparkle!) for the holidays.  Recipe is below.

Gathered up some of my ingredients.  I find that getting everything out and lined up makes mixing so much faster.  As I use the ingredient I set it aside so I know if I mixed it yet, just in case I get distracted.
 Sifted dry ingredients. Sifting makes them more fluffy.

 Add those raisins in, they are good for you!  Makes eating the cookie not so bad.

 Baked with a little sparkle and shine, and of course LOVE.

Oatmeal Cookies With Raisins
Ingredients
1 1/2 cups of unbleached flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 stick, plus 6 tablespoons of butter, softened
3/4 cup of firmly packed dark brown sugar
1/2 cup of white sugar
2 eggs, lightly beaten
1 teaspoon vanilla extract
3 cups quick oatmeal, uncooked
1 cup of raisins

Directions
Preheat oven to 350 degrees.  Line baking sheets with parchment paper.

Sift together the flour, baking soda, cinnamon and salt, set aside.  In a large bowl beat the butter, dark brown and white sugar on medium speed until creamy.  Add the eggs and the vanilla and beat until combined. Gradually add in the flour mixture until all is mixed well.  Add in the oatmeal, mix well, then turn off the mixer.  Stir in the raisins with a wooden spoon.

Drop by rounded tablespoon, or roll into balls and dip tops in sanding sugar.  Place on baking sheets 1 inch apart and bake for 8 - 10 minutes or until lightly browned.  Cool for 1 minute before removing from the baking sheet. Transfer and cool on wire racks.  Store in an airtight container.  Makes about 4 dozen cookies.
