Kickin' Fried Chicken

It was a whole day of cooking for me on Saturday, for my youngest daughter who is going back to college from Spring break.  She likes having home cooked meals. One of the things on her menu was fried chicken, with a lot of other foods, you will see them later.  All of my kids are foodies, they watch all the cooking shows, like to go to the grocery store, and love food that is homemade.  It's kind of funny in this day and age, when everything is fast, fast, fast.  I fried her chicken and packed it up with all the other things we made.  She will have a weeks worth of "good food" as she calls it, to share with her roomies.  Recipe below.

Flour and corn meal give fried chicken a crispy crust, and add some seasonings to the mix.
 Marinate the chicken in buttermilk, that keeps it juicy.  Coated pieces and ready for frying.
About 8 minutes on each side and you have some Kickin' Fried Chicken!
 Kickin' Fried Chicken


Ingredients
5-6 pieces of chicken, rinsed and leave the skin on
1 cup low fat buttermilk
1 cup of flour
1/2 cup yellow corn meal
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/8 teaspoon cayenne pepper
1/2 teaspoon kosher salt
1/4 teaspoon black ground pepper
Canola oil for frying

Directions
Pour the cup of buttermilk into a sealable bag and add the chicken.  Seal the bag , massage the bag and turn it over a couple of times so the chicken is coated.  Let marinate for about 3 hours.

In a shallow bowl, mix the flour, corn meal, garlic powder, paprika, cayenne pepper, salt and pepper.  Coat the chicken with the mixture and transfer to a plate.  Heat oil in a large skillet on medium high heat.  The flour will absorb into the chicken, so right before putting chicken into the oil, coat them again.  Drop a few pieces into the pan, don't crowd them.  Fry for about 8 minutes on each side, drain on paper towels.  Serve hot or cold.
