Skirt Steak Tacos

This is my new favorite way to make beef tacos, no more ground meat for me.  Skirt steak, if you have never tried it, is a thin, tender, inexpensive cut of beef.  I seasoned it with taco seasoning and lime juice then grilled it in a grill pan.  Slice it down and it becomes this flavorful, wonderful piece of meat.

 Out of the pan, give it rest, then thinly slice for your soft tacos.
 
 Chop up tomato, lettuce, red onion and cilantro.  I use LaTortilla High Fiber Soft Wraps.  Stuffed them with my meat and veggies, topped with fat free Mexican blend cheese and taco sauce.
 Rolled up and dinner is served! So yummy.
