I had two avocados that were getting pretty ripe sitting on the counter and decided to make a salad out of them. I never tried this before and can only describe it as tasting just like guacamole. I cut the avocados in half, seeded them, cut them down the middle, then sliced them across and scooped them out of their skins into a bowl. I sqeezed half a lemon over it, cut tthree Campari tomatoes into quarters, added sliced red onion, seasoned with salt and pepper and drizzled olive oil over the top and tossed. Nice, light, colorful lunch for me tomorrow!
